The modes on any note
A mode can be built on any note. The quickest way is to think of which major scale it comes from: Dorian is its degree II, Phrygian III, Lydian IV, Mixolydian V, Aeolian VI and Locrian VII.
G Dorian has the notes of F major, because G is the II of F: it has a B♭. In the same way, A Phrygian has the notes of F major; G Lydian, those of D major, and A Mixolydian, also those of D major.
Comparing them on the same note
The best way to hear their character is to play them on the same tonic. Ordered from brightest to darkest, each lowers one more degree than the previous one.
